Truffle Canapés

Ingredients:

  • 2 eggs,
  • 1 black truffle mushroom,
  • 3 tbsp of butter,
  • 2 tbsp. of cream,
  • salt,
  • pepper,
  • bread

Cut out heart shapes in the bread. You can do this with a cookie cutter. Heart shaped would probably be best. In a small bowl mix eggs, cream, salt and pepper until creamy. Melt butter in a bain marie and add egg mixture. Toast molded bread forms and add cooked egg mixture and top off with chopped black truffles.

Love appetizer balls

Ingredients

  • 6 potatos
  • 1/2 lb (200 gr) veal
  • 4 pc. Of garlic
  • Tomato puree
  • 2 eggs
  • cracker crumbs (bread crumbs)
  • Pink sauce (1/3 mayonese, 2/3 tomato sauce)
  • salt
  • pepper
  • vegetable oil

Boil potatoes until soft and strain with Chinese strainer until pureed. Refrigerate. Brown veal in small amount of vegetable oil and when almost done add chopped garlic. Continue browning until garlic turns a golden color. Add salt and pepper to taste, then add tomato puree.

Cheese Fondue recipe

 

Ingredients

  • Cheese fondue1/3 lb (150 gr.) of gruyere cheese
  • 1/3 lb (150 gr.) of emmental cheese
  • 1 ½ cups (250 ml.) of dry white wine
  • 1 garlic clove,
  • salt, ground pepper, and a pinch of nutmeg
  • French bread cut in small pieces
  • 1 tspn of corn starch
  • 1-2 tsps of Kirsch (rum or brandy works just as well)

Grate the gruyere cheese and slice the emmental cheese thinly. Mix all ingredients in a bowl.

Add a touch of garlic taste to the fondue by rubbing the garlic clove all over the inside edges of the fondue pot (discard garlic clove). Add white wine and simmer, but don’t bring to a boil.

Wild Berry and Star Fruit Compote

To create a nice Wild berry and Star Fruit recipe, you need to slow cooking, this is very important for the fruit to retain its shape.

3 cups mixed blackberries, raspberries, strawberries, and blueberries
1/2 cup orange juice
1/2 cup confectioners sugar, sifted
1 tablespoon quick-cooking tapioca
I star fruit (carambola), sliced four times cross-wise to form stars
2 scoops vanilla ice cream
2 sprigs mint leaves

Rinse fruit. Place berries, orange juice, and sugar in a saucepan and bring to a simmer over moderate heat. Reduce heat and simmer for 5 minutes. Using a strainer, remove fruit from saucepan and place in a dish. Set to the side.

  • 12 ounces lean boneless lamb shoulders
  • 1 1/2 cups water, or lamb based white stock
  • 1/4 each onion
  • 1/2 whole cloves, stuck into onion
  • 1/4 each bay leaf, tied into a sachet
  • 1/4 clove(s) garlic, tied into a sachet
  • 1 each peppercorns, tied into a sachet
  • 1 1/2 sprig(s) parsley, tied into a sachet
  • 1/16 teaspoon thyme, tied into a sachet
  • 1/8 teaspoon salt, to taste
  • 3/4 cup sliced onions
  • 1/4 cup thinly sliced leek, white part only
  • 1 1/2 each potatoes, peeled, thinly sliced
  • 4 ounces carrots, thinly sliced
  • 4 ounces turnips, peeled, cut into matchsticks

Now you are ready to prepare your romantic dinner for two. Cut the meat into 1-inch cubes. Heat water to a boil in a heavy saucepan, over a moderate flame. Add the lamb to the saucepan (water should cover the lamb completely). Return to a boil, reduce heat, and skim well. Add the clove-studded onion and the sachet. Season with salt and simmer for 60 minutes.
